A TYPICAL MEAL AT MY HOME BY YU-SHENG CHIH (OCT. 7, 2007)

My wife is a devoted vegetarian. She does not eat meat, chicken, and seafood for many years. I am not picky for food, I eat anything if it is healthy, nutrient, and balance. Since I read the book ' Without toxin, you would be light' few years ago, I have acknowledged that vegetarian food is actually healthy (if you are a vegetarian, please continue to be vegetarian.). Some toxin in our body comes from food. Meat and dairy contains lot of saturated fat, if we eat them too much, our hearts and arteries might be damaged by the high LDL cholesterol, and increasing the body's acidity, decreasing the function of immune system.

So I rarely eat meat and poultry. I sometimes eat eggs and seafood (if you are a vegetarian, please continue not to eat seafood.). On the other hand, some toxin comes from wrong cooking process, as high and dry heat cooking carbohydrate food might produce a chemical toxic substance- acryl amide that causes cancer and severe nerve damage. I seldom cook food by baking, deep frying, or broiling, I always cook food by boiling or steaming. I have never used microwave oven in last five years because it's high heat would destroyed almost all of the nutrient. The typical meal at my home so called 'detoxification meal' means that this meal contains minimal toxin and also the toxin in the body could be removed by the meal. It usually contains one serve fruit, one serve sweet potato, one serve multiple grains and beans rice and two serve vegetables, all the fruit and half of the vegetables eaten raw. I usually prefer seasonal and local fruit and vegetables. Occasionally, I like to taste some special I had ever eaten while i was young. I sometimes take nuts, seeds and dry fruit for snacks. I seldom buy white rice, white flour and other refined carbohydrate, because most of their fibers, vitamins, minerals and enzymes are lost. My typical meal looks simple, inexpensive and not appetizing but it is really healthy, nourishing, balance and ' detoxification '.
